I’ve always been one to provide for my friends and family, and cooking has been a major part of that. When I was younger, my parents would get home an hour or more after I did, and when I was old enough to hold a knife (safely, of course) it was deemed my job to make dinner for the family. At first I wasn’t sure what to make and needed a lot of guidance, but soon enough my dinners were well accepted after a hard days’ work.
After I moved out I found that cooking for myself was a lot more challenging, especially being accustomed to cooking for 3. I struggled for a little while, then found a great solution. Rather than trying to relearn how to cook less, I would just cook for my roommate(s) and I! What a great idea! And let me tell you, my roommates just loved it.
But I guess all things in life have their ups and downs, and my current roommate hasn’t been home much recently. Being a creature of habit, this leaves me with way, way too much food. So I’ve been trying to invite other friends over for weekly meals. Two of my close friends are vegan, and cooking for them is way less challenging than I expected! I’m used to the imitation meat, and cook vegetarian most days, so I just have to remember one simple rule: less cheese, more veggie! Adding things that give flavour like fresh cilantro or caramelized onion can make it just as delicious, if not more.
Here’s how I made Spaghetti With Meaty Tomato Sauce, Vegan Style:
1. I diced some fresh veggies and fried them up with a bit of oil. In this I used onion, orange pepper and tomato.
2. I added 1 packet of Yve’s Original Veggie Ground Round into the mix when the veggies were still crunchy. This is imitation meat and is precooked, so it only had to be heated.
3. Then I added 1 can of plain organic tomato sauce, and a handful of fresh cilantro.
4. Once the sauce was hot, I spread over some cooked pasta noodles, and viola!

Oh that looks good! I almost never cook with ground round, unless I’m making sloppy janes- but this would be a lot more filling than anything else I make

Oh! I didn’t even KNOW there was such a thing like ground round! That makes things super convenient! I don’t eat read meat or pork, so I’ve using chicken mince, but I think I’d prefer to use something like this

yum yum yum! i’m pretty bad when it comes to cooking, but this recipe *looks* simple enough even for me to follow. it looks so good! i’ve gotta look for some of that Yve’s Original Veggie Ground Round.
